Chicken & Spinach Lasagna

  • 12 oz. (350 g.) frozen, chopped spinach, thawed and drained
  • 1/2 tsp. ground nutmeg
  • 1 lb. (450 g.) lean, cooked chicken, diced
  • 4 sheets no-precook lasagna noodles
  • Tomato Sauce (see recipe below)
  • Salad greens, to serve

Directions

    Drain spinach again and pat dry on paper towels.

    Arrange spinach in bottom of baking dish.
  3. 3
    Sprinkle with nutmeg and season to taste.

    Arrange diced chicken over the spinach.

    Cover with lasagna noodles and spoon the tomato sauce over all.

    Bake at 350° until heated throughout.

    Serve with salad greens.
