Ingredients

  • 2 Tbsp. margarine
  • 6 pieces turkey bacon
  • 2 chicken breasts boneless and skinless
  • 2 large onions sliced
  • 8-10 small red potatoes cut in halves
  • 4 celery stalks cut in 1/2 inch slices
  • 3 large carrots
  • 1/2 lb. fresh mushrooms or 1 large can sliced
  • 2 Tbsp. fresh basil
  • 1/2 c. white wine
  • 1/2 c. chicken broth
  • salt and pepper to taste
  • 1-2 cloves of garlic chopped

Directions

    Brown bacon in margarine.

    Remove bacon and set aside to cool.

    Break up in bits for garnish over finished dish.

    Cut up chicken into 1 inch chunks and brown in skillet about 10 minutes. Remove to bowl and cover.

    Add onion and garlic to skillet, cook and stir until onion is soft about 3 minutes.

    Add rest of ingredients and chicken to pan.

    Cover and simmer until veggies are soft.
