- 2 Tbsp. vegetable oil
- 1 lb. skinless, boneless chicken, cut into thin strips
- 1/2 tsp. ground ginger
- 1/2 tsp. garlic powder
- 1 Tbsp. vinegar
- 3 c. cut-up vegetables (broccoli, carrots, sweet red pepper)
- 1 can tomato soup
- 2 Tbsp. soy sauce
Directions

1In skillet, in a tablespoon oil, stir-fry 1/2 of chicken until brown.

2Remove and repeat with remaining chicken.

3In 1 tablespoon oil, stir-fry vegetables with ginger and garlic powder until just tender.

4Add soup, soy sauce and vinegar.

5Heat to boil.

6Return chicken to skillet.

7Serve over rice.
