  • 2 Tbsp. vegetable oil
  • 1 lb. skinless, boneless chicken, cut into thin strips
  • 1/2 tsp. ground ginger
  • 1/2 tsp. garlic powder
  • 1 Tbsp. vinegar
  • 3 c. cut-up vegetables (broccoli, carrots, sweet red pepper)
  • 1 can tomato soup
  • 2 Tbsp. soy sauce

Directions

    In skillet, in a tablespoon oil, stir-fry 1/2 of chicken until brown.

    Remove and repeat with remaining chicken.

    In 1 tablespoon oil, stir-fry vegetables with ginger and garlic powder until just tender.

    Add soup, soy sauce and vinegar.

    Heat to boil.

    Return chicken to skillet.

    Serve over rice.
