- 1 stewing chicken
- 1 large onion
- 2 carrots
- 1/2 c. lemon juice
- 1/4 tsp. pepper
- 1/4 tsp. paprika
- 1/4 tsp. basil
- 1/4 tsp. tarragon
- 1/2 c. fresh parsley, chopped
- 2 stalks celery
Directions

1Remove skin and cut chicken into pieces.

2In deep pot, cover chicken with water.

3Add remaining ingredients.

4Cover and bring to boil.

5Lower heat and simmer for 2 hours.

6Strain, reserving chicken and vegetables.

7May be frozen.

8Serving size 1 cup.
