Ingredients

  • 8 slices day-old white bread
  • 2 c. cooked, diced chicken
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped celery
  • 1/2 c. mayonnaise
  • 3/4 tsp. salt
  • dash of pepper
  • 2 slightly beaten eggs
  • 1 can cream of mushroom soup
  • 1 1/2 c. milk
  • 1/2 c. shredded cheese

Directions

    Cut bread in 1-inch cubes and place in bottom of a 9 x 13-inch baking dish.

    Combine chicken, vegetables, mayonnaise and seasoning.

    Spoon over bread cubes.

    Sprinkle with remaining bread cubes.

    Combine milk and eggs and pour over all.

    Cover and chill at least 1 hour.

    Spoon soup over top and sprinkle with buttered bread crumbs.

    Bake at 325° for 50 minutes.

    Sprinkle cheese over top for last few minutes of baking.
