- 6 whole Boneless, Skinless Chicken Thighs, Rinsed, Trimmed Of Excess Fat And Cut Into Bite-sized Pieces
- 1 Tablespoon Sweet Paprika
- 2 pinches Coarse Salt And Freshly Ground Pepper
- 2 Tablespoons All-purpose Flour
- 1 Tablespoon Oil, Or As Needed
- 1/2 whole Medium Yellow Onion, Diced
- 8 ounces, weight Baby Bella Mushrooms, Rinsed And Sliced
- 1/4 cups Vermouth
- 1/2 cups Chicken Stock
- 1 Tablespoon Tomato Paste
- 2 whole Small Dried Bay Leaves
- 1/4 cups Greek Plain Yogurt
- 1 pound Egg Noodles
- 1/4 cups Fresh Parsley, For Garnish

1Once youve prepped the chicken, toss it with the paprika, a good pinch of salt and pepper.

2Dust with flour.

3Heat a medium skillet over medium-high heat.

4Add the chicken and sear in oil until browned on all sides, about 7 minutes total.

5Remove from pan and set aside.

6Add a smidge more oil to the pan if needed, then toss in the onions and mushrooms.

7Saute until everything starts to brown and caramelize, 5 minutes.

8Deglaze the pan with the vermouth and let sizzle about a minute.

9Add the stock, tomato paste and bay leaves.

10Stir to combine.

11Nestle the chicken back in the pan (with its collected juices) and simmer until the chicken is cooked through and the sauce thickens a tad, 5-7 minutes.

12Stir in the yogurt and cook 2 more minutes.

13Give the whole mess a good pinch of salt and pepper.

14In the meantime, boil your egg noodles until they reach al dente.

15Drain.

16Serve the stroganoff over a bed of noodles and garnish with parsley.
