  • 2 pounds Chicken (fryer)
  • 4 stalks Celery
  • 1 jar Pimentos
  • 1 can Mushrooms
  • 3 Tablespoons Butter
  • 1/4 cups Flour
  • 1/2 packages Saltines

Directions

    Cook a fryer and after it is cooled, cut in bite-sized pieces.

    Dice 4 stalks of celery and boil in 2 cups of water until tender.

    Remove the celery and put in the baking dish with the cut-up chicken; reserve the celery water.

    Add a jar of mushrooms and pimentos, drained, to the baking dish with the chicken and celery.

    Melt 3 TBL.

    of butter in a saucepan.

    Add about 1/4 cup of flour and cook for 2 minutes, then slowly add the celery water to make a gravy.

    Pour this over the chicken and veggies and mix; add salt and pepper to taste.

    Crush 1/2 package of saltines, sprinkle on top, then add a few pats of butter.

    Bake at 350F until hot.
