Chicken Taco Rice

Ingredients

  • 1 lb. boned chicken breasts, cut in strips
  • 1 can tomato sauce
  • 1 can corn, drained (12 oz.)
  • 1 1/2 c. instant rice
  • 1/2 c. shredded Cheddar cheese
  • tortilla chips
  • 2 Tbsp. oil
  • 1 (13 oz.) can chicken broth
  • 1 medium red pepper, cut in strips
  • sour cream (optional)

Directions

    Cook and stir chicken in hot oil until lightly browned.

    Add broth, tomato sauce and seasoning mix. Bring to a boil.

    Reduce heat, cover and simmer about 5 minutes.

    Add corn and red pepper. Bring to a full boil. Stir in rice. Cover and remove from heat. Let stand 5 minutes. Fluff with fork and serve with cheese, tortilla chips and sour cream, if desired.
