Ingredients

  • 2 whole chicken breasts
  • 1 clove garlic, minced
  • 1 onion, diced
  • 1 Tbsp. oil
  • 1/2 tsp. oregano
  • 1/2 tsp. cumin
  • 1 (4 oz.) can chopped green chiles
  • 1 to 2 tomatoes, peeled and chopped
  • 1/2 c. chicken broth
  • 1 bay leaf
  • 6 to 7 peppercorns

    Cover chicken with water.

    Add peppercorns, 1/2 small onion (sliced) and 1 bay leaf.

    Bring to boil and simmer 45 minutes. Remove chicken, debone and shred.

    Retain broth.

    In large skillet, saute garlic and diced onion in oil until tender.

    Add oregano, cumin, green chiles and tomatoes with chicken broth and shredded chicken.

    Simmer 20 minutes.
