- 4 thighs, floured, salted and peppered
- 2 Tbsp. olive oil
- 1/2 onion, chopped
- 1/4 lb. mushrooms, sliced
- 1 garlic clove, minced
- 2 Tbsp. tomato paste
- 1/4 tsp. rosemary
- 1/4 tsp. thyme
- 1/2 c. dry white wine
- 2/3 c. chicken broth
- minced parsley
Directions

1Brown chicken in oil; remove.

2Add onion, mushrooms, garlic, tomato paste and herbs; cook 1 minute.

3Return chicken and add wine and broth.

4Bring to a boil.

5Braise, covered, in a 400° oven for 20 minutes, or until tender.

6Salt and pepper.

7Sprinkle with parsley.

8Serve with noodles or rice.
