Ingredients

  • 4 thighs, floured, salted and peppered
  • 2 Tbsp. olive oil
  • 1/2 onion, chopped
  • 1/4 lb. mushrooms, sliced
  • 1 garlic clove, minced
  • 2 Tbsp. tomato paste
  • 1/4 tsp. rosemary
  • 1/4 tsp. thyme
  • 1/2 c. dry white wine
  • 2/3 c. chicken broth
  • minced parsley

Directions

    Brown chicken in oil; remove.

    Add onion, mushrooms, garlic, tomato paste and herbs; cook 1 minute.

    Return chicken and add wine and broth.

    Bring to a boil.

    Braise, covered, in a 400° oven for 20 minutes, or until tender.

    Salt and pepper.

    Sprinkle with parsley.

    Serve with noodles or rice.
