  • 1 (3 lb.) chicken, boned and cut into 8ths
  • 1 tsp. pulped ginger
  • 1 tsp. pulped garlic
  • 1 1/2 tsp. ground coriander
  • 1 1/2 tsp. ground cumin
  • 1 tsp. chili powder
  • 3 Tbsp. plain yoghurt
  • 1 tsp. salt
  • 2 Tbsp. lemon juice
  • 1 sliced onion
  • 1 Tbsp. tomato puree
  • red food coloring (optional)
  • 3 Tbsp. oil
  • 1 lemon, cut in wedges
  • 6 lettuce leaves

    In a large mixing bowl, blend spices together with yoghurt, salt, lemon juice, coloring and tomato puree.

    Add chicken pieces and coat well.

    Leave overnight or for at least 3 hours.
