Chicken Tostadas

- 2 boneless skinless chicken breasts
- 1 cup salsa
- 2 clove minced garlic
- 1/2 cup canola oil
- 12 tortillas, corn
- 1 1/2 cup black beans
- 1 tomato, diced
- 1 1/2 cup onion, diced
- 1/2 head lettuce, shredded
- 2 cup guacamole
- 2 cup shredded Mexican cheese
Directions

1Bake chicken breasts in oven for 30 minutes at 350F.

2Remove from oven and cool.

3Using two forks, shred the chicken.

4In a medium sized bowl, mix shredded chicken with salsa and garlic.

5Add salt and pepper to taste.

6In small frying pan, heat oil until a drop of water sizzles immediately when added to it.

7Fry tortilla lightly on one side.
-
8Turn and fry lightly on the other side.

9Remove from oil and drain on paper towel.

10Repeat with all 12 tortillas

11Heat chicken filling and frijoles until steaming.

12Place one to two tablespoons of frijoles on top of fried tortilla.

13Top with another two tablespoons of chicken filling.

14Add tomatoes, onions, lettuce and guacamole.

15Top with cheese.
-
16Repeat for all tostadas.
