Chicken Under Foil

  • 1 chicken breast
  • 1 medium potato, cut into 1/8-inch slices
  • 1 medium carrot, thinly sliced
  • 1 medium yellow squash, thinly sliced
  • 1 stalk celery, chopped into 1/4-inch pieces
  • 1/4 bell pepper, sliced
  • 1 small onion, sliced
  • 4 fresh mushrooms (whole)
  • 5 or 6 fresh pea pods
  • 1 tsp. butter
  • salt and pepper to taste

    On large sheet of aluminum foil, place all ingredients in center.

    Wrap up ingredients and try to form good seal.

    Repeat this process two more times, making sure to form good seals. Place chicken under foil directly in coals of fire.

    Allow to cook 15 to 20 minutes on each side.

    Take off fire and open carefully. Meal should be eaten directly from foil.
