Chicken-Vegetable Slaw

  • 1/4 cup nonfat mayonnaise
  • 1/4 cup rice wine vinegar
  • 1 teaspoon sugar
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 2 cups finely shredded cabbage
  • 1 cup chopped cooked chicken breast (skinned before cooking and cooked without salt)
  • 1/4 cup seeded, chopped tomato
  • 1/4 cup coarsely shredded carrot
  • 2 tablespoons chopped cucumber
  • 1 tablespoon chopped green onions
  • 2 teaspoons chopped unsalted cashews

Directions

    Combine first 5 ingredients in a small bowl, stirring well with a wire whisk.

    Combine cabbage and next 5 ingredients; add mayonnaise mixture, and toss gently. Sprinkle with cashews just before serving.
