- 1/4 cup nonfat mayonnaise
- 1/4 cup rice wine vinegar
- 1 teaspoon sugar
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground pepper
- 2 cups finely shredded cabbage
- 1 cup chopped cooked chicken breast (skinned before cooking and cooked without salt)
- 1/4 cup seeded, chopped tomato
- 1/4 cup coarsely shredded carrot
- 2 tablespoons chopped cucumber
- 1 tablespoon chopped green onions
- 2 teaspoons chopped unsalted cashews
Directions

1Combine first 5 ingredients in a small bowl, stirring well with a wire whisk.

2Combine cabbage and next 5 ingredients; add mayonnaise mixture, and toss gently. Sprinkle with cashews just before serving.
