- 6 cooked chicken breasts or whole chicken
- 16 oz. vermicelli
- 2 large bell peppers
- 2 large onions
- 1 large can mushrooms
- 1 large can Ro-Tel tomatoes
- chicken broth
- 2 lb. Velveeta cheese
- 1 stick margarine
Directions

1Cook vermicelli.

2Saute chopped onions and peppers in margarine.

3Add Ro-Tel tomatoes with 1/2 the juice, discard the rest.

4Cut Velveeta in cubes and add to the sauteed mix.

5Add cooked chicken which has been cut into bite-sized pieces and mushrooms to the melted cheese mixture and enough chicken broth to make mixture thin.

6It will thicken as it cools.

7Place vermicelli in two large glass baking dishes and pour the cheese mixture over the top.

8Bake at 350° until bubbly, about 20 to 30 minutes.

9Makes 2 large casseroles and freezes well.
