- 3 1/2 lb. cut-up chicken
- 2 cloves garlic
- 1/2 c. canola or olive oil
- 1 tsp. rosemary
- 4 red potatoes
- 1 small onion
Directions

1Slice onion.

2Peel potatoes and parboil for 15 minutes.

3Saute chicken, garlic and onion in 1/4 cup of oil.

4Add potatoes and 1/4 cup of oil (quarter potatoes).

5Sprinkle rosemary over chicken and potatoes.

6Cover and simmer 15 minutes.

7Turn potatoes and chicken. Cook an additional 15 minutes until chicken and potatoes are golden brown.
