Chicken Waldorf

  • 12 None baby potatoes
  • 1 tsp whole black peppercorns
  • 2 None chicken breasts, trimmed
  • 2 None green apples, cored, chopped
  • 1 None red apple, cored, chopped
  • 3 stalks celery, thinly sliced
  • 2/3 cup walnuts, chopped
  • 2/3 cup low-fat yogurt
  • 1/2 tbsp lemon juice
  • 12 leaves lettuce

Directions

    Place potatoes in a large saucepan. Cover with cold water then bring to a boil. Cook for 10-12 mins, or until tender. Drain. Let cool slightly then halve.

    Meanwhile, fill a large saucepan 1/3 full with water. Place over high heat. Add peppercorns and bring to a simmer. Add chicken, cover and simmer for 10-12 mins, or until chicken is just cooked. Set aside, cover loosely with foil and let rest for 5 mins. Slice.

    Combine apples, celery, walnuts and potatoes. Whisk together yogurt and lemon juice. Season. Toss with apple mixture. Arrange 2 lettuce leaves on each serving plate. Top with chicken and salad. Serve.
