Chicken wings with bacon

  • 3 lb chicken wings, separated (approx. 24 pieces)
  • 12 slices thick cut bacon, halved and stretched
  • to taste Black pepper

    Air-dry the wings.

    While you wait, crush the salt and pepper together with a mortar and pestle.

    When the wings are dry, toss them lightly in the crushed salt and pepper.

    Once dusted, place on a rack to dry.

    Pre-heat oven to 450 degrees F.

    Wrap a slice of bacon diagonally around each winglet.

    Place on a rack, wrapped side down.

    Place inside oven and bake for 35 minutes.

    Flip over and bake another 35 minutes, watching carefully for scorching, until other side has identical crispness.

    Remove from oven and drizzle with salad dressing/sauce of choice.
