Chicken with Balsamic Vinaigrette

  • 1/2 cups Balsamic Vinegar
  • 1/4 cups Lemon Juice
  • 1/4 cups Dijon Mustard
  • 3 cloves Garlic, Minced
  • 1/2 cups Olive Oil
  • Salt And Pepper
  • 4 whole Boneless, Skinless Chicken Breasts

Directions

    Whisk together vinegar, lemon juice, mustard, garlic, olive oil, salt and pepper.

    Pour into a baking dish and add chicken breasts, turning to coat.

    Cover with plastic wrap and marinate in the refrigerator for at least four hours and up to overnight (I usually make it before I leave for work to be ready by dinnernine or ten hours).

    Preheat oven to 400 degrees.

    Bake the chickenmarinade and allfor 30 minutes.

    Remove chicken and pour marinade into a small saucepan.

    Cook over medium heat until boiling and slightly thickened (5 minutes or so).

    Serve chicken with the sauce spooned over it.
