Chicken with Balsamic Vinaigrette

- 1/2 cups Balsamic Vinegar
- 1/4 cups Lemon Juice
- 1/4 cups Dijon Mustard
- 3 cloves Garlic, Minced
- 1/2 cups Olive Oil
- Salt And Pepper
- 4 whole Boneless, Skinless Chicken Breasts
Directions

1Whisk together vinegar, lemon juice, mustard, garlic, olive oil, salt and pepper.

2Pour into a baking dish and add chicken breasts, turning to coat.

3Cover with plastic wrap and marinate in the refrigerator for at least four hours and up to overnight (I usually make it before I leave for work to be ready by dinnernine or ten hours).

5), flip the chicken breasts around every now and then to make sure theyre evenly marinated.

6Preheat oven to 400 degrees.

7Bake the chickenmarinade and allfor 30 minutes.

8Remove chicken and pour marinade into a small saucepan.

9Cook over medium heat until boiling and slightly thickened (5 minutes or so).

10Serve chicken with the sauce spooned over it.
