- 2 (1 3/4 lb.) chickens, cut into serving pieces
- salt and pepper to taste
- 3 Tbsp. butter or oil
- 1/4 c. chopped shallots
- 1 or 2 Tbsp. chopped parsley
- 10 thin lemon slices
- 1/2 c. dry white wine
Directions

1Sprinkle chicken pieces with pepper and salt to taste.

2Melt butter (or oil) in a skillet and brown the chicken, skin side down.

3When golden, turn the pieces and brown other side. Sprinkle with shallots and parsley.

4Arrange lemon slices over the chicken.

5Cover and cook 5 minutes.

6Pour off fat and add wine. Cover and cook 15 minutes or until tender.

7Serve with juices and fluffy rice.
