Chicken With Mango Salsa

- 1 None mango, diced
- 1 small cucumber, diced
- 1/2 small red onion, diced
- 2 tbsp olive oil
- 1 tsp paprika
- 4 None boneless skinless chicken breasts
- None None Steamed rice, to serve
Directions

1Toss mango, cucumber and onion with 1 tsp of olive oil in a medium bowl.

2Combine remaining oil and paprika and brush over chicken. Heat a lightly oiled skillet on medium heat. Cook chicken for 4-5 mins each side, until browned and cooked through.

3Serve chicken on steamed rice. Top with salsa and serve.
