  • 1 None mango, diced
  • 1 small cucumber, diced
  • 1/2 small red onion, diced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 4 None boneless skinless chicken breasts
  • None None Steamed rice, to serve

Directions

    Toss mango, cucumber and onion with 1 tsp of olive oil in a medium bowl.

    Combine remaining oil and paprika and brush over chicken. Heat a lightly oiled skillet on medium heat. Cook chicken for 4-5 mins each side, until browned and cooked through.

    Serve chicken on steamed rice. Top with salsa and serve.
