Chicken with pinneaple

Ingredients

  • 1 tbsp dark soy sauce
  • 1 tsp butter
  • 1 tsp vegetable oil
  • 1/2 onion, chopped into chunks
  • 1 small green bell pepper cut into chunks
  • 1 small red bell pepper cut into chunks
  • 1/2 carrot, sliced
  • 2 chicken breasts, deboned and cubed into bite size pieces
  • 1 cup pineapple chunks, drained
  • 1/2 cup water
  • 1 chicken bouillon cube
  • 1 tbsp ketchup
  • 1 tbsp cornstarch dissolved in 1 tablespoon water

    Melt butter in a pan, sautee chicken with soy sauce until brown and set aside

    In same pan, heat oil and sautee onion, peppers and carrots for 2 minutes

    Add chicken and pineapple to pan and cook 2 more minutes

    Add chicken bouillon cube, ketchup and water and bring to a boil

    Add dissolved cornstarch and stir until sauce thickens

    Rectify seasoning, if it is too sweet for your taste, you can add an extra dash of soy sauce
