  • 1 large onion, minced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 cups cooked chickpeas
  • 1 12 cups tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 12 teaspoon dried oregano
  • 18 teaspoon red pepper flakes
  • 2 cups hot cooked rice
  • 1 cup nonfat yogurt
  • 1 cup diced green pepper
  • 1 cup diced tomato
  • 1 cup shredded lettuce

Directions

    In a saucepan over medium heat cook the onions and garlic in the oil until translucent.

    Stir in the chickpeas, tomato sauce, chili powder, cumin, oregano and red pepper.

    Simmer, uncovered, for about 30 minutes.

    Serve over rice, topped with yogurt, peppers, tomatoes and lettuce.
