  • 1/4 cup olive oil
  • 2 T lemon juice
  • 2 cloves garlic mashed
  • 1/2 t crushed red pepper
  • s&p
  • 2 cans low sodium chick peas, rinsed (about 3 cups)
  • 1/4 cup parsley, finely chopped
  • 1 shallot, finely diced
  • 1 red pepper, finely diced
  • 15 green or kalamata olives pitted & halved
  • 8 oz. snow peas, blanched and cut on the diagonal in slivers
