- 1 can chickpeas, drained and rinsed
- teaspoon dried mint
- 1 tablespoon cider vinegar
- 1 small tomato, seeded and diced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/2 red onion, thinly sliced
- 1 clove garlic, minced
Directions

1In medium bowl combine chickpeas, tomato, onion, garlic and mint.
