  • 1 3/4 c. pinto beans
  • 1/3 c. chopped onion
  • 1 tsp. chopped green chile
  • 1 1/2 tsp. salt
  • 3/4 tsp. cumin
  • 3/4 tsp. chili powder
  • 3/4 tsp. paprika
  • 1/2 tsp. oregano
  • 1 1/2 c. canned tomatoes
  • 1/4 c. oil
  • 1 c. Cheddar cheese

Directions

    Cook beans until barely tender.

    Add onion, chile, salt, spices and tomatoes. Continue cooking until tender.

    Remove from heat and add oil and cheese.

    Beat until beans are well mashed. Makes 5 cups.
