- 1 3/4 c. pinto beans
- 1/3 c. chopped onion
- 1 tsp. chopped green chile
- 1 1/2 tsp. salt
- 3/4 tsp. cumin
- 3/4 tsp. chili powder
- 3/4 tsp. paprika
- 1/2 tsp. oregano
- 1 1/2 c. canned tomatoes
- 1/4 c. oil
- 1 c. Cheddar cheese
Directions

1Cook beans until barely tender.

2Add onion, chile, salt, spices and tomatoes. Continue cooking until tender.

3Remove from heat and add oil and cheese.

4Beat until beans are well mashed. Makes 5 cups.
