- 10 eggs, beaten
- 1/2 c. unsifted flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 lb. cheddar cheese, grated
- 1/2 c. melted butter
- 1 (4 oz.) can diced ortega green chilies
- 1 c. bacon, cooked & crumbled
- 1 pt. creamed small curd cottage cheese, optional
Directions

1Beat eggs, add remaining ingredients except chilies.

2Fold in chilies.

3Pour into greased 9 x 13 inch baking dish.

4Bake at 350° for 20 minutes or until cooked all the way through.

5Serve hot. Makes 10 to 12 servings.

6You may substitute bacon with breakfast sausage or smokey links that have been cooked and cut into bite size pieces.
