- 8 oz. Jack cheese
- 5 eggs
- 1 c. cottage cheese
- 1/4 c. margarine, melted and cooled
- 1/4 c. unsifted flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 (4 oz.) can diced Ortega chiles, drained
Directions

1Shred Jack cheese.

2Beat eggs thoroughly.

3Add cottage cheese and margarine.

4Mix well.

5Add flour, baking powder and salt and mix.

6Add shredded cheese and chiles and stir to blend.

7Pour into a greased 8-inch square baking pan.

8Bake in a 350° oven for 35 minutes or until edges are lightly browned and center appears firm.

9Makes 6 to 8 servings.
