- 3 cups whole wheat flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 teaspoons ground cinnamon
- 3 eggs
- 14 cup vegetable oil
- 34 cup unsweetened applesauce
- 1 cup white sugar
- 1 cup brown sugar
- 3 teaspoons vanilla extract
- 3 cups grated zucchini
- 12 cup flax seed
Directions

1Grease and flour two 8 x 4 inch pans.

2Preheat oven to 325 degrees.

3Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.

4Beat eggs, oil, vanilla, and sugar together in a large bowl.

5Add sifted ingredients to the creamed mixture, and beat well.

6Stir in zucchini until well combined.

7Pour batter into prepared pans.

8Bake for 40 to 60 minutes, or until tooth pick inserted in the center comes out clean.

9Cool in pan on rack for 20 minutes.

10Remove bread from pan, and completely cool.
