Chile Rellenos Casserole

  • 1 (7 oz.) can whole green chiles (mild)
  • 3/4 lb. medium Cheddar cheese, shredded
  • 3/4 lb. Monterey Jack cheese, shredded
  • 1 (7 oz.) can diced green chiles
  • 8 eggs
  • 1/2 tsp. dry mustard
  • 1 (12 oz.) can evaporated milk
  • salsa (to serve)

Directions

    Split whole chiles lengthwise and remove seeds under cold water.

    Lay chiles flat in bottom of pan, sprayed with Pam.

    Mix cheeses.

    Top chiles with a layer until chiles and cheese are used.

    Beat together the eggs, dry mustard and evaporated milk. Pour over cheese and chili mixture.

    Bake in 9 x 13-inch dish at 350° for 30 to 40 minutes, until knife inserted comes out clean. Serve with salsa.
