- 1 (7 oz.) can whole green chiles (mild)
- 3/4 lb. medium Cheddar cheese, shredded
- 3/4 lb. Monterey Jack cheese, shredded
- 1 (7 oz.) can diced green chiles
- 8 eggs
- 1/2 tsp. dry mustard
- 1 (12 oz.) can evaporated milk
- salsa (to serve)
Directions

1Split whole chiles lengthwise and remove seeds under cold water.

2Lay chiles flat in bottom of pan, sprayed with Pam.

3Mix cheeses.

4Top chiles with a layer until chiles and cheese are used.

5Beat together the eggs, dry mustard and evaporated milk. Pour over cheese and chili mixture.

6Bake in 9 x 13-inch dish at 350° for 30 to 40 minutes, until knife inserted comes out clean. Serve with salsa.
