  • 4 to 8 bell peppers
  • 1 lb. ground beef
  • 4 large eggs
  • 1/4 c. flour
  • 1/2 tsp. salt
  • 1 lb. white Jack cheese
  • 1 large can tomato sauce

Directions

    Broil bell peppers, peel skin off. Cut bell peppers in the middle, remove seeds. Brown ground beef, drain.

    Add Jack cheese and cook until done.

    Beat eggs, add flour and salt.

    Fill bell peppers with ground beef mixture.

    Dip bell peppers into egg mixture and fry until done.

    Dip cooked bell peppers into tomato sauce.

    Continue cooking for 10 to 15 minutes more.

    Serve with rice.
