Chiles Rellenos Casserole

  • 1 (14 oz.) can Ortega whole green chiles
  • 1 lb. Cheddar cheese, cut into 3 x 1-inch strips
  • 1/4 lb. Cheddar cheese, grated
  • sunflower seeds for garnish (optional)
  • 4 Tbsp. flour
  • 4 Tbsp. half and half
  • 4 eggs
  • salt and pepper to taste

Directions

    Stuff each chile with a strip of cheese.

    Arrange chiles in a buttered casserole dish in as many layers as necessary.

    In a mixing bowl, combine flour, half and half and eggs.

    Beat slightly until mixed.

    (Batter will appear slightly lumpy.)

    Season with salt and pepper and pour over chiles.

    Bake in preheated oven for 30 to 40 minutes.

    Five minutes before serving, sprinkle top of casserole with grated cheese and sunflower seeds.
