- 2 tbs vegetable oil
- 2c. chopped onion
- 1c chopped bell pepper
- 2lb cubed beef
- .75lb dried beans (mix kidney, navy, etc.)
- 1 can (28 oz) tomato puree
- 2 can diced tomatoes - with juice
- Spice Mix (see above)
Directions

1Soak beans overnight (12 hours minimum) in 1 gal water with 2 tsp cumin.

2dredge beef in 1/2 c. flour, 1tsp salt, 1 tsp parsley, 1 tsp chili powder, 1 tsp cayenne.

3In Dutch oven, toss beef in hot oil, coat, add peppers and onion.

4When 1/2 beef is browned, add all tomato products. Stir to mix and coat.

5Add beans (rinse before adding).

6Cook 1 hour on low heat.

7Add 2 Anaheim peppers sliced thinly, seeds removed.

8Add spice mix and 10oz beer.

9Cook on low for 5-6 hours, stirring occasionally.
