- 1 tbsp Olive Oil
- 1 tbsp Butter
- 1 medium Yellow onion
- 1 tsp Cumin
- 1 tbsp Coriander
- 1 each Clove
- 1 lb Ground beef
- 28 oz Canned whole tomatoes
- 32 oz Canned kidney beans
Directions

1Combine butter and olive oil in a sauce pot over medium low.

2Slice onion and add to the pot.

3Stirring periodically, cook the onion to a very light caramel.

4Meanwhile, heat spices gently in a pan, just until fragrant, then grind finely and stir into caramelized onions to toast gently just before adding ground beef.

5Add ground beef.

6Stir over medium heat until browned.

7Add canned tomatoes.

8Simmer gently for about 45 minutes, stirring occasionally.

9Drain and rinse kidney beans and add them to the pot.

10Simmer for about 15 minutes.

11Season with salt and pepper and serve, ideally with a big chunk of fresh cornbread.
