Ingredients

  • 1 lb. ground beef
  • 1 c. chopped onion
  • 3/4 c. chopped green pepper
  • 1 Tbsp. minced garlic
  • 1 (16 oz.) can kidney beans or pinto beans, drained
  • 1 small can tomato paste
  • 1 (7 oz.) bottle beer
  • 1 Tbsp. chili powder
  • 1 1/2 tsp. dried basil
  • 1 can tomatoes, chopped
  • salt
  • pepper

Directions

    In a large kettle, cook ground beef, onion, green pepper and garlic until meat is browned. Drain off fat.

    Stir in undrained tomatoes, beans, paste, beer, chili powder, basil, 1/2 teaspoon salt and 1/4 teaspoon pepper.

    Bring to a boil and reduce heat. Cover and simmer 20 minutes.

    Makes 4 to 6 servings. Serve with chopped raw onions, jalapeno peppers and grated Cheddar cheese.
