  • 1 tsp. ground cumin
  • 1 tsp. ground oregano
  • 1 tsp. cayenne pepper
  • 6 Tbsp. yellow corn meal
  • 6 Tbsp. chili powder
  • 3 tsp. salt
  • 4 cloves garlic, chopped
  • 1 tsp. sugar
  • 3 Tbsp. paprika
  • 3 Tbsp. flour
  • 1 c. water

    Sear over high heat, stirring

    until meat is gray. Add water and cook covered at a bubbly simmer for 1 1/2 hours.

    Add all remaining ingredients,

    Cook another 30 minutes at same

    bubbly simmer.

    Next add thickening mixed with 1 cup cold water.
