- 3/4 c. vegetable oil
- 4 lb. chuck steak, coarsely ground
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tsp. oregano, minced
- 1 tsp. ground cumin
- 2 Tbsp. chili powder
- 3 Tbsp. tomato paste
- 6 tomatoes, blanched, peeled, seeded and diced
- 4 c. hot water
- salt to taste
- 1/2 tsp. red pepper
Directions

1Heat the oil in a heavy pan over medium heat and add beef, onion and garlic.

2Cook until lightly browned.

3Add the remaining ingredients, except for the salt, and bring to a boil.

4Lower the heat and simmer, uncovered, for about 1 hour.

5Skim occasionally and season with salt.
