Ingredients

  • 3/4 c. vegetable oil
  • 4 lb. chuck steak, coarsely ground
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tsp. oregano, minced
  • 1 tsp. ground cumin
  • 2 Tbsp. chili powder
  • 3 Tbsp. tomato paste
  • 6 tomatoes, blanched, peeled, seeded and diced
  • 4 c. hot water
  • salt to taste
  • 1/2 tsp. red pepper

Directions

    Heat the oil in a heavy pan over medium heat and add beef, onion and garlic.

    Cook until lightly browned.

    Add the remaining ingredients, except for the salt, and bring to a boil.

    Lower the heat and simmer, uncovered, for about 1 hour.

    Skim occasionally and season with salt.
