- 2 large cloves garlic
- 2 large onions
- 2 Tbsp. oil
- 2 lb. lean beef
- 1 (28 oz.) can whole tomatoes with juice
- 1 (6 oz.) can tomato paste
- 3 c. beef broth
- 1 (15 oz.) can drained and washed kidney beans
- 3 Tbsp. chili powder
- 2 tsp. ground cumin
- 1 tsp. dried oregano
- 1 Tbsp. salt
- 1/4 tsp. pepper
Directions

1Mince garlic and onion.

2Heat oil in a large saucepan and add onions and garlic.

3Saute the mixture about 10 minutes.

4Chop meat to medium coarseness.

5Add it to the pan and brown it for 10 minutes.

6Pour the juice from the tomatoes into the pan.

7Coarsely chop the tomatoes.

8Add them to the pan with all the remaining ingredients.

9Simmer the chili, uncovered, for 1 hour.

10Correct the seasoning and water if the chili becomes too thick.
