Ingredients

  • 1 lb. dry beans (pinto, kidney or October beans or a combination)
  • 1 qt. stewed tomatoes
  • 1 c. dry barley
  • 1 large onion, diced
  • 1 green pepper, diced
  • 4 stalks celery, diced
  • 6 oz. tomato paste
  • 2 Tbsp. paprika
  • 2 tsp. dry mustard
  • 2 tsp. salt
  • 1 Tbsp. raw honey
  • 3 bay leaves

Directions

    Cook beans and barley according to package directions in large pot with onion, pepper and celery.

    Add stewed tomatoes, tomato paste and remaining ingredients.

    Add beans and simmer 45 minutes. Serve hot or cold.
