  • 2 lb. lean ground beef
  • 5 large potatoes, peeled and cubed
  • 4 carrots, sliced
  • 1 sweet pepper, diced
  • 1 medium onion, diced
  • 1 (17 oz.) corn, drained
  • 1 (16 oz.) pork and beans
  • 1 (14 oz.) pinto beans, drained
  • 1 (26 oz.) kidney beans, drained
  • 1 (4 oz.) mushrooms, drained
  • 1 (28 oz.) crushed tomato
  • 1 (28 oz.) tomato puree
  • 1 c. water
  • 2 tsp. oregano
  • 3 Tbsp. chili powder
  • 1 tsp. garlic salt
  • 1 tsp. crushed red pepper

Directions

    Brown beef and drain off excess fat.

    Precook potatoes and carrots about 5 to 10 minutes.

    Put beef in a large, heavy pot; add water and drained vegetables, green pepper and onion. Sprinkle in seasonings and stir to blend.

    Simmer over low heat 2 to 2 1/2 hours.
