Chili Beef Stew

Ingredients

  • 1 1/2 lb. cubed beef chuck
  • 1 tsp. salt
  • pepper
  • flour
  • 1 1/2 Tbsp. margarine
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1/2 tsp. chili powder
  • 1 (1 lb.) can tomatoes
  • 1 (4 oz.) can green chilies
  • 1 lb. red kidney beans, drained
  • 3/4 c. shredded Cheddar cheese

Directions

    Salt and pepper beef cubes; roll in flour and shake off excess.

    Brown beef, then brown onion in same pan.

    Add garlic, salt, chili peppers, tomatoes and their liquid and green chilies. Simmer until beef is tender, about 1 1/2 hours.

    Mix in beans and cook 20 minutes more until slightly thickened.

    Top with cheese.
