- 2 c. yellow cornmeal
- 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 1 tsp. sugar
- 1 1/4 tsp. salt
- 2 1/2 c. milk
- 2 tsp. shortening or oil, melted
- 1 tsp. minced onion (dried)
- 1 c. shredded Cheddar cheese
- 1 (8 3/4 oz.) can whole corn, drained
- 1 (4 oz.) can green chili peppers, seeded, rinsed and chopped
- 1/4 c. red peppers
Directions

1Mix cornmeal, flour, baking powder, sugar and salt together. Add milk, eggs and shortening.

2Mix together.

3Add onion and let stand 5 minutes.

4Fold in cheese, corn, green chili peppers and red peppers.

5Spoon about 1/3 cup batter into greased and floured 2 1/2-inch muffin cups.

6Bake at 375° for 25 to 30 minutes.

7Makes 15 muffins.
