- 1 lb. boneless, skinless chicken breast halves
- 1 Tbsp. oil
- 1 medium onion, chopped
- 1 small green pepper, chopped
- 1 small red pepper, chopped
- 1 clove garlic, minced
- 1 (15 oz.) can Mexican stewed tomatoes
- 1 bag Success rice, prepared
- 3/4 c. Monterey Jack cheese, shredded
- 1 (15 oz.) can chili (no beans)
Directions

1In large skillet, saute chicken in oil until no longer pink; set aside.

2In same skillet, cook onion, pepper and garlic until tender; drain.

3Stir in chili and stewed tomatoes.

4Add rice; arrange chicken on top of mixture and top with shredded cheese. Simmer 10 minutes.
