Chili Con Queso

Ingredients

  • 1/2 c. finely chopped onion
  • 1 (4 oz.) can green chili peppers, rinsed and chopped
  • 1 c. (4 oz.) shredded Monterey Jack cheese
  • tortilla or corn chips
  • 1 Tbsp. butter
  • 2 medium tomatoes, peeled, seeded and chopped
  • 1/4 tsp. salt
  • 1 c. (4 oz.) shredded Cheddar cheese
  • milk

Directions

    In a medium saucepan cook onion in butter or margarine until tender but not brown.

    Stir in tomatoes, chili peppers and salt. Simmer, uncovered, for 10 minutes.

    Add cheeses, a little at a time, stirring just until melted.

    Stir in a little milk if mixture becomes too thick.

    Heat through over low heat.

    Transfer to a small serving bowl.

    Serve warm with tortilla chips or corn chips.

    Makes about 1 3/4 cups.
