Ingredients

  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 4 Tbsp. butter, divided
  • 1 (16 oz.) can tomatoes
  • 1 (4 oz.) can chopped chilies
  • 2 Tbsp. flour
  • 1 c. milk
  • 1 Tbsp. Tabasco sauce
  • 1 tsp. salt
  • 2 lb. Velveeta cheese, cubed
  • 1/2 lb. Cheddar cheese, cubed
  • 1 1/2 to 2 lb. ground beef, browned and drained

    Saute onion and garlic in 2 tablespoons butter.

    Add tomatoes; simmer until thick.

    Stir in chilies.

    Make white sauce with remaining 2 tablespoons butter, flour and milk.

    Add Tabasco sauce and salt.

    Add both cheeses, stirring over medium until melted. Combine cheese sauce, tomato mixture and ground beef.

    Serve in chafing dish, crock-pot or fondue pot with tortilla chips.
