Chili Corn Bread

  • 1 (8 1/2 oz.) pkg. corn muffin mix
  • 1/4 c. melted butter
  • 1 (8 1/2 oz.) can diced green chilies, drained
  • 1/2 c. grated sharp Cheddar cheese
  • 1 Tbsp. butter
  • 8 3/4 oz. can whole kernel corn, drained

Directions

    Prepare muffin mix according to package directions; stir in melted butter, corn, chilies and 1/4 cup grated cheese.

    Use remaining butter to grease 9-inch pie pan; pour in batter. Sprinkle remaining 1/4 cup cheese over batter.

    Bake in preheated 400° oven for 25 minutes or until toothpick inserted in middle of bread comes out clean.
