Ingredients

  • 10 eggs
  • 1 pt. creamed cottage cheese
  • 1 lb. Jack cheese, shredded
  • 1 (4 oz.) can chiles, chopped
  • 1 medium jar picante sauce (optional topping)
  • 1/2 c. unsifted flour
  • 1 tsp. baking powder
  • 1/2 c. melted butter
  • 1 tsp. salt

Directions

    In a large bowl, beat eggs until light (yellow color).

    Add all ingredients, except chiles.

    Beat until smooth.

    Stir in chiles.

    Pour into buttered 13 x 9-inch pan and bake at 350° for about 35 minutes or until top is brown and center will be firm. Spoon picante sauce on top.

    Makes 10 to 12 servings.
