  • 10 eggs
  • 1/2 c. flour (unsifted)
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 pt. small curd cottage cheese
  • 1 lb. Jack cheese, shredded
  • 1/2 c. butter, melted
  • 2 cans diced chilies

Directions

    Beat eggs until light brown and lemon colored.

    Add flour, baking powder, salt, cottage cheese, Jack cheese and melted butter, blending smoothly.

    Stir in chili.

    Pour mixture into well-buttered 9 x 13-inch baking dish.

    Bake in 350° oven for approximately 30 minutes until top is light brown and center firm.
