- 2 tablespoons butter
- 13 cup finely chopped onion
- 13 cup finely chopped scallions or green onions
- 1/2 cup finely chopped celery
- 1 teaspoon chili powder
- 1 cup raw rice
- 1 1/2 cups fresh or canned chicken broth
- Salt to taste if desired
- Freshly ground pepper to taste
Directions

1Heat 1 tablespoon of the butter in a saucepan and add the onion, scallions, celery and chili powder.

2Cook, stirring, until wilted.

3Add rice and stir.

4Add broth, salt and pepper and bring to a simmer.

5Cover and cook exactly 17 minutes.

6Stir in remaining butter and serve.
