  • 2 tablespoons butter
  • 13 cup finely chopped onion
  • 13 cup finely chopped scallions or green onions
  • 1/2 cup finely chopped celery
  • 1 teaspoon chili powder
  • 1 cup raw rice
  • 1 1/2 cups fresh or canned chicken broth
  • Salt to taste if desired
  • Freshly ground pepper to taste

Directions

    Heat 1 tablespoon of the butter in a saucepan and add the onion, scallions, celery and chili powder.

    Cook, stirring, until wilted.
