- 2 tsp. vegetable oil
- 1 c. chopped onions
- 1 (1 lb.) can corn, drained
- 1 (4 oz.) can chopped green chilies, drained
- 1/2 c. shredded low-fat Cheddar cheese
Directions

1Heat oil in a large nonstick skillet over medium-high heat. Add onion; cook, stirring frequently, until onions start to brown, about 3 minutes.

2Add corn and chilies.

3Cook, stirring frequently, 5 minutes.

4Remove skillet from heat and sprinkle cheese evenly over corn.

5Cover and let stand 5 minutes to melt cheese.
